Very Berry Mason Jar Salad

Serves 2

Ingredients

  • 1 can BPA-free chick peas, drained and rinsed
  • 1 avocado, diced
  • ¼ cup Dressing of choice
  • 1 small red onion, sliced
  • 2 celery stalks, diced
  • 1 cucumber, chopped
  • ½ cup sliced strawberries
  • 1 cup fresh blueberries
  • 3 cups baby spinach
  • ¼ cup flat leaf parsley, chopped
  • ¼ cup sliced almonds or chopped nuts of your choice

Directions

Divide and layer ingredients in the order listed into two mason jars.

  • Start with the dressing at the bottom, this way, helps the lettuce and veggies from getting mushy.
  • Add any hard veggies and fruits.
  • A layer of grains, if you’re using any.
  • Add your choice of protein. (not included in calculations)
  • Then add soft veggies, fruits, roasted nuts, or seeds.
  • Top this layer with cheese, if using.
  • Add salad greens on top. Add as much as you can squeeze into the jar. Cover with a tight lid and refrigerate until ready to use.

Immediately before eating, shake the jar gently to mix the dressing throughout.
